Frozen jackfruit? Yes...I came across this in a Asian store along with the canned jackfruit. It's suppose to be sweet so I decided to try it in a smoothie! It's pretty refreshing!!
Jackfruit Mint Smoothie
3 frozen jackfruit chunks
3/4 c. canned lite coconut milk
1/2 c. pineapple juice
5 mint leafs
1 tsp. fresh grated ginger
I've purchased fresh jackfruit at the farmer's market/flea market on Beach Blvd (weekends only - on Beach between 9A and Southside - North side of the road).
You could look for canned jackfruit at any of the Indian/Pakistani stores in Jacksonville - Apna Bazaar on Beach, or House of Spices on Baymeadows. I'm sure other Asian supermarkets will have them as well.
Two ways with jackfruit. Ripe is good for smoothies, as the delicious recipe above, the not so ripe version can be cooked until it "shreds", and then becomes the basic for pulled pork knock offs. If you have to buy canned, watch out that it is not in syrup.
It is my understanding that it is the stuff in syrup that is the ripe kind. I haven't tried it yet because of the syrup and I can't get it fresh where I live. Do you think if you drain the syrup off it would work in a smoothie or would it be gross?

Agreed! I like the canned jackfruit in the water brine. Works best for me! Haven't tried a whole fresh one yet. I heard they are messy to work with.
