Crust-less Blueberry Cheesecake Smoothie

Wanting dessert but not the guilt trip? Try this dessert smoothie!

Crust-less Blueberry Cheesecake Smoothie

1/2 c. frozen blueberries
1/2 block/or 6 oz. soft tofu
1/3 c. raw cashews soaked in hot water for minimum of 30 minutes, then drain
2 TBSP. fresh lemon juice (1 small lemon)
2 TBSP. pure maple syrup
1 tsp. pure vanilla extract
good pinch of extra fine sea salt
3 ice cubes

-Put all ingredients in a blender. Blend until smooth!  ENJOY!

Blueberry Jalapeno Jam

Since fresh blueberries have been inexpensive lately, I decided to make a blueberry jam. I love mine with a kick, so I added a jalapeno! This recipe make 9-10 oz and will last about a week in the refrigerator.  Just the right amount to use on pancakes, fresh baked bread, desserts, or whatever you desire...hmmmm.

Blueberry Jalapeno Jam

3 c. fresh blueberries, rinsed
1 medium or large jalapeno seeded & minced (if you don't want it as hot, remove the inside white ribs)
1/2 c. turbinado sugar
1 TBSP. water
1 TBSP. lemon juice

-In a medium or large cooking pot, smash the blueberries with a potato smasher.
-Add the remaining ingredients and combine well.
-Bring the blueberry mixture to a boil. Turn down heat and simmer for approx. 10 minutes stirring frequently.
-Turn off heat to let thicken & cool.
-Store in a container with a lid. Refrigerate until ready to gobble up!

Fruit Wrap with Blueberry Ginger Cream Sauce

I had bought 2 lbs of strawberries, peaches, and kiwi the other day. What a good way to use up some strawberries is to make a fruit wrap! I just wanted something light and easy. Plus I had some sauce left over from the Pineapple Almond Cake I had made. You can use any fruit you may have on hand! Have fun and experiment!

Fruit Wrap with Blueberry Ginger Sauce

Step 1..prepare your filling
1 flour tortilla...your favorite brand
2-4 strawberries, hulled & sliced
1 kiwi, skin removed & sliced
1/2 peach, pitted & sliced
1-2 TBSP Blueberry Ginger Sauce (made from the cream sauce below)

NOTE: If you don't want to make the cream sauce you can take powder sugar and non-dairy milk and mix together like a frosting, and then add the berries & ginger.


Step 2

Cream Sauce
1 container vegan cream cheese
1 TBSP pineapple juice
1 1/2 c. powder sugar or less if desired
3 drops of almond extract

-Blend all together with hand held blender until smooth.

-Store in a container in the refrigerator.


Step 3
Blueberry Ginger Sauce
2 TBSP. Cream Sauce1-2 TBSP fresh or frozen blueberries (can use another fruit if desired)1/2 - 1 tsp. freshly grated ginger..depends how gingery you like it-Mix all together smashing a few berries.



Step 4
-Spread  the prepared Blueberry Ginger Sauce on the tortilla
-Layer fruit across the tortilla

Wrap up and enjoy!

Blueberry Spinach Oatmeal

What's in your breakfast bowl this morning?? My husband made blueberry spinach oatmeal! It sounds eww but my daughter love's it! Oats deliver a source of dietary fiber and other nutrients. Plus it's 100% whole grain. Blueberries are very good in vitamin C, Magnesia, and dietary fiber, they deliver powerful antioxidant protection from the cellular damage caused by free-radicals. I cup of blueberries only contain 81 calories!

Blueberry Spinach Oatmeal

3/4 c. old fashion oats
1 c. water
1 handful spinach
1 c. blueberries
nuts, sweetener optional

Mix oats and water in a microwave proof dish. Microwave for 3 minutes. Stir in spinach and blueberries and microwave for another 2 minutes. Remove from microwave and let cool for a few minutes.

Crazy mixture but really good!
